Asia Style Cucumber Salad Ingredients 3–4 Small Cucumbers (or several mini cucumbers) 1 Carrot (grated/shredded) 1 Small Red Onion 1 Small Avocado (diced) 1 Pinch of chopped Parsley 1 Handful of Peanuts or Cashews 1 Handful of Pomegranate Seeds (the creator used dried raspberries as a substitute) For the Dressing 4 tbsp Olive Oil or Sesame Oil 2 tbsp Soy Sauce 1 tbsp Sesame Seeds 1 tsp Sumac Juice of 1 Small Lemon Salt & Pepper (to taste) Instructions Prep the Veggies: Slice the cucumbers into very thin slices or ribbons. Grate the carrot and finely dice the red onion and avocado. Combine: Place the cucumbers, carrots, and the remaining salad ingredients (nuts, parsley, pomegranate/raspberries) into a large bowl.
