I was today years old when I found out that Japan has grilled meat certifications that are required if you sell it that’s specifically focused on the meat, and not tied to safe handling. Maybe the Japanese are better at it than we give them credit for….one way or another I gotta try yakitori in Japan. Gotta start saving for round trip plane tickets…

About a 4 kg pork rack using Bluebag Kingsford and a little bit of red oak. Low humidity and a good ambient temp will shave time off of a long smoke. They happen a little faster…
