In 1977, Ariel Sharon declared za’atar a ‘protected plant', making it illegal for Palestinians to pick. In 2005, akkoub a similar fate. Ironic given how much ISR has destroyed and uprooted zataar fields with bulldozers. Both herbs are essential in Palestinian culture and cuisine
