Good friends stick with you through the best and worst times, and I’m proud to call Jules one of mine. She’s the best ally you could hope for and always delivers a belly laugh when it’s needed. Jules will no longer be a colleague—which, let’s be honest, is a relief because she’s so fucking annoying. Seriously though, what a legend. She’s overcome so much and been by my side for 3 chaotic, rambunctious years that never stopped being an adventure. I’m incredibly proud of her. Jules inspires so many—gay, straight, and everything in between—but what I respect most is how she’s created such a safe space for younger staff to feel supported and just be themselves. Lucky for our guests, I’ll be taking over the wine programme. 🍷🤣 🥴🥴 Jules, you’ll always be my bestie. The very best of luck in your new role—you’re going to smash it! San Sebastián Never been I had four trips cancelled throughout covid plus my 40th birthday treat last year Time is tight at the moment, so I needed two absolute soldiers with me to SMASH the doors off San Sebastián in 48hrs We did it all, from top to bottom and inside out street grub, pintxo bars and the high end and a few lil duds Even got to meet the lovely Arzak Family and got the entire tour and somehow managed a walk-in at Kokotxa Jatetxea too plus lots more top joints None of them booked, just bold cheeky smiles and a bit of luck The stars just aligned Here are 16+ meals in 2 days condensed to 90 seconds Loved it

Bravo, John, we love watching internal promotions working out so well, he’s being very humble here to be honest, which he is, and one of the reasons we love him, he work’s incredibly hard every day and absorbs knowledge and gets stuck in and can often have 20 steaks on the go with 20 more being called out on top of that. All different cuts, sizes snd temperatures. It takes a certain temperament to focus and stay calm and still be a pleasant person Peter & Mark did a great job tutoring you and they’re very proud along with the rest of us Nice work John
