Cel shaded models may look simple but underneath the hood there's lots going on👉 -Outlines are controlled with vertex weights -Crisp lines like around the eyebrows are on their own UV island -Shadows aren't drawn into the base texture, AO maps are used for it. You can see there are permanent shadowed areas that blend into the shader shadows -Shadow color maps are used, otherwise the yellow area won't be able to have pinkish shadows It is also possible also do more with SDF maps and normal editing.. But that's for another time
