Let's look at the entire sequence, shall we? 1. Aang says out loud that he won't fight Jet. 2. Aang spends the entire "fight" trying to get his glider back. That's the goal here. He doesn't want to hurt Jet because he still sees Jet as his friend. (Also, Aang dislikes hurting people) When Jet falls from the trees, Aang could finish him off there, but he chooses not to because that's not his goal. He runs straight for his glider which is actually how Jet is able to get a hit in. 3. When Aang gets serious for 5 seconds, Jet can't touch him. 4. Aang doesn't lose the "fight". Katara interrupts it. Jet got one good hit in which Aang was about to get back up from. If we want, we can say Jet successfully stalled long enough for his Freedom Fighters to blow the dam, and thus he earned a victory that way, (even though it's later revealed Sokka ruined his plans) but saying Aang lost a fight to Jet is being either incompetently negligent to the scene or intentionally misleading.
