Here is my Soup Joumou with Goat recipe- ( everyone does it differently) Meat : - 2 lbs goat meat, cleaned with lime and vinegar then rinsed and marinated with Haitian epis (seasoning) - 1 tsp each: salt, pepper, cloves, paprika - 2 tbsp oil Soup Base: - 1 medium squash, peeled and cubed - 1 medium onion, diced - 2 carrots, sliced - 1 potato, diced - 2 stalks celery, chopped - 1 leek, sliced - other veg of your choosing - 1 Scotch bonnet pepper (whole) - 8 cups water or beef stock - 1/2 head cabbage (optional) - 2 cups cooked pasta (optional) - Salt and pepper -Fresh parsley and oregano - Instructions 1. Season and Brown the Goat: - Season goat with epis, salt, pepper, cloves, and paprika. - Brown in oil, then set aside. 2. Make the Squash Puree: - Boil squash in 4 cups water until soft, then mash. 3. Cook the Soup: Add water to meat till tender then add in all the vegetables till tender - add squash puree, and remaining water/stock. - Add potato, cabbage (if using), and Scotch bonnet pepper fresh parsley, oregano wrapped. Simmer for 45 minutes. 4. Final Steps: - Adjust salt and pepper. Stir in cooked pasta (if using). - Remove Scotch bonnet before serving. I might be missing a few steps, but you get the gist. Serve hot and enjoy! I also made a hibiscus and passionfruit juice ❤️
