The last pancake recipe you will ever need. No more pancake mix or other recipes. This is the one. Ingredients below: - 2 cups all purpose flour - 2 cups whole milk - 5 tsp baking powder - 1 tsp salt - 2 tsp cinnamon sugar (1:4 ratio) - 3 tsp granulated sugar - 1 lemon juice and zest - 2 eggs - 1 tsp vanilla extract - 4 tbsp melted butter Combine the wet and dry separately like I do and then combine slowly with a whisk by hand. Always have butter in the pan that is foamy and keep your pan on a gentle heat.

Quick tomato sauce recipe I pull out most of the time at home. 4-8 hours sauces are cool but we don’t always have the energy. Extra virgin olive oil in a pot and cook down 1/2 an onion diced for 6-7 minutes. Add in a few cloves of minced garlic and cook for another 2-3 minutes. Add a little white wine (4-6oz), a can of San Marzanos, salt, pepper, a rind of parmigiano reggiano or pecorino romano and some fresh basil. Simmer for 30-40 minutes. I like to add some red pepper flakes to give some heat. Easiest sauce to make quickly that requires next to no effort.

One of my go to recipes for this time of year. This one is perfect for the family. Take half an onion, a couple carrots, a couple stalks of celery and cut them up nice and fine. Mince a few cloves of garlic and set aside. Take about a pound of Smoked Kielbasa, cut into slices and brown in you pot. Once the fat is rendered nicely and sausage is brown, throw in your mirepoix and cook for 5-7 minutes. Add in your garlic and cook another couple minutes. Add a splash of white wine vinegar, about 32oz of chicken stock, a can of crushed tomatoes, a can of beans, salt, pepper, dried Italian seasoning and some fresh sage. Cover and simmer for about 30 minutes. Add in a good cup or two of kale, some mushrooms of choice and a little chili powder. Cook another 5-10 minutes. Serve with shredded Pecorino Romano over the top.

Being from a Polish family, this one hits home. Gołąbki (Polish stuffed cabbage rolls). Simmer some crushed tomatoes with some Worcestershire, honey, salt and pepper. Take a whole cabbage and cut out the core, then blanch in boiling water core side down for a minute or so. When the cabbage cools down slightly, take some pork, beef, leftover cooked rice, salt, pepper and mix it up. Slowly peel the cabbage leaves and try not to tear them. Add your mix into the leaves and roll them up. Add a layer of sauce to your baking pan, then the cabbage rolls, then top with sauce again. Cook covered low and slow at 350 for about an hour or so. I usually cook uncovered for 15 minutes initially at 400, then lower to 350, cover and bake the other 45. These are simple, delicious and healthy.

Batch cooking your own sauce and freezing some will keep you from buying overpriced jars of sauce at the store when you’re in a pinch. This is about 10 pounds of canned San Marzano tomatoes with some onion, carrot, celery and garlic (I had to use elephant garlic since all the garlic at my store was gross). Start with extra virgin olive oil in a pot and cook down your mirepoix for 3-5 minutes. Add in your garlic and cook another couple minutes. Add in tomato paste (I used a 4oz tube). Cook another 3 minutes. Add in your tomatoes, fresh basil, fresh oregano, parmigiano reggiano rinds (the end of the cheese block, it becomes soft and adds umami to the sauce) salt and pepper. Simmer this for 3-8 hours (longer you go the more concentrated the flavor and the sauce will reduce some). If you have a blender or food processor, blend up all of the sauce into a purée. This isn’t necessary, but it will be a better texture if you do this. Add in some extra virgin olive oil and more salt and pepper if you need it. Transfer to freezer safe containers and store.

Homemade crab cakes (my favorite food on planet earth) In a bowl mix the following: - 1 pound crab meat - 1.5 cups of bread crumbs (I used stale bread) - .5 red bell pepper - 2 green onions - 1 stalk of celery - 1 clove garlic - 1/3 cup mayonnaise - 1/4 cup Dijon mustard - 2 tbsp Worcestershire sauce Seasonings - I recommend Old Bay (I didn’t have any) but if you don’t have it or forget it, salt, pepper, cayenne, chili, garlic, onion, coriander, paprika etc. all the things. Cook the cakes on each side for about 3 minutes or so (until golden brown) in a combination of beef tallow and butter. Sprinkle lemon juice as it’s cooking. For the sauce: - Fresh Dill - Sour Cream - Lemon Juice - Extra Virgin Olive Oil
