There are four World Central Kitchen warehouses in Jordan... filled with food for the people of Gaza….rice, oil, flour, vegetables…over 100 trucks loaded and ready to arrive to the border crossing in less than an hour. We have hundreds more trucks ready to bring cooking supplies and more food, but still the government of Israel is not permitting us to enter with aid. We have been cooking and feeding in Gaza at a huge scale for more than 19 months. More than 130 million meals! For months, Israel has not allowed any aid to enter…we have been forced to shut down of our community kitchens and bakeries. We have no food left…but we are ready at any moment to start cooking again. Many innocent families are desperate to eat. Let us feed the people of Gaza!show more

Wild Game Kitchen is back, and we brought the... whole pig. Season 6 premieres tonight for Grill Week on Tastemade, and we’re kicking it off with suckling pig two ways. First, a three-cup-style braise served over plancha fried rice. Then, a whole pig roasted over open fire, pulled apart, and piled into Philly-style pork sandwiches with broccoli rabe and sharp provolone. This is exactly what I love about cooking over fire: big technique, big flavor, a bit of patience, and huge payoff. Watch the Season 6 premiere tonight on Tastemade. Huge gratitutde to Intuitive Content for another fantastic season. Recipes are on my website and the Tastemade cooking app.show more

Look, Louisiana has some incredible restaurants, but don’t you... dare sleep on those gas station buffets. They may not have a Michelin star hanging on the wall, but somewhere in that kitchen is a mawmaw, granny, memaw, or Mémère cooking from a recipe that has never been written down—and measuring every ingredient with her heart. Fried chicken, rice and gravy, red beans, crawfish étouffée, and a piece of cornbread that could make a grown man emotional. Michelin can keep its stars. The real stars of Louisiana food are standing behind a gas station counter asking if you want a little more gravy on that.show more

The best shopping in Ahmedabad can be buying fresh... Atta! Since last 32 years I am buying attas of more than 20 varieties from the chakki owner in Vastrapur, opposite Jain temple. He sells more than 50 types of fresh flours. All attas in range of rs. 70 to rs.150 per kilo. He keeps flour of all kinds of millets like jav, juwar, bajri. Also, raw material to make handvo, dhoklas, bhadku (mix of many millets), brittle wheat atta (to make crisp Bhakhri that tastes better than any biscuits) and rice atta, rajgara atta, dry flour of menduwada, dosa and Idli. What treat! All over Gujarat there are many such chakkis selling freshly ground raw materials to make Gujarati snacks. Delighted that small pleasures of centuries old cooking traditions continues in 21 century.show more

Big river prawns 📍Thailand 🇹🇭 Taste Thailand: Harvested from... the river basins of Thailand, most famously around the Chao Phraya River, giant river prawns (Goong Mae Nam) are among the country's most celebrated freshwater delicacies. Renowned for their impressive size, these crustaceans are prized for their firm, sweet flesh and, most notably, an abundance of rich, creamy orange head fat (tomalley) that melts into a savory natural butter during cooking. The classic Thai preparation involves butterfly-splitting the live prawns lengthwise and grilling them shell-down over open charcoal embers until cooked. They are traditionally served over a bed of warm jasmine rice, drizzled with the rich melted head fat, and accompanied by nam jim seafood- a fiery dipping sauce made from fresh green chilies, garlic, lime juice, and fish sauce that cuts through the prawn's intense richness. In 1939, Jawaharlal Nehru visited Rabindranath Tagore to ask... if Jana Gana Mana could become India's national anthem. A statistician was in the room. That statistician, P.C. Mahalanobis, would go on to build the system that let a newly independent nation of 350 million people see itself clearly for the first time. In 1950, nobody knew what the average Indian ate. Or earned. Or whether they had work. Policy ran on guesswork. Mahalanobis changed that. He built the National Sample Survey, which knocked on thousands of doors and asked, item by item: what did you eat last month? Rice, dal, cooking oil, fuel, clothing. Harold Hotelling, then among the foremost statisticians in the world, wrote that no sampling technique developed anywhere could "compare in accuracy" with what Mahalanobis had built. This is the story of how India built, then lost, and is slowly rebuilding the infrastructure of national self-knowledge. Caramelized Onion Coconut Ramen Ingredients For the caramelized onion... coconut broth 2 medium onions, thinly sliced 1 tbsp butter 1-2 tsp chili oil, or to taste 1 tbsp soy sauce ½-¾ cup coconut milk ½-1 cup water or ramen cooking water For the creamy ramen base 1 medium-large egg yolk I used 2 because my eggs were small 1-1½ tbsp Kewpie mayo or any good-quality egg mayo 1-2 tsp chili oil 1 tbsp good-quality peanut butter 1-2 tsp soy sauce Seasoning, to taste 1 tsp Buldak cheese seasoning, rice vinegar For the tofu & toppings Crumbled tofu Oil Salt Fresh chilies Ramen noodles Jammy eggs Spring onions White and black sesame seeds Method Caramelize the onions: Heat butter in a pan and add the sliced onions. Cook over medium-low heat until they soften, release their moisture and begin to shrink and turn golden brown. Add chili oil and continue cooking until the onions are deeply golden and caramelized. Add soy sauce, then pour in the coconut milk and water/ramen cooking water. Mix well and keep the broth hot. Make the creamy base: In a large bowl, add the egg yolk, Kewpie mayo, chili oil, peanut butter, soy sauce and your seasoning. Add the Buldak cheese seasoning. Mix everything until smooth. Add the hot broth: Pour the warm caramelized onion coconut broth into the egg-yolk mixture while continuously whisking. Do not put the bowl back on the heat or simmer it. The heat from the broth gently cooks and emulsifies the yolk, creating a silky, creamy broth. Add your cooked ramen noodles and mix everything together until the noodles are beautifully coated in the creamy broth. For the crispy tofu: Sauté crumbled tofu in a little oil with salt and fresh chilies until slightly crispy and crumbly. Top the ramen with crispy tofu, jammy eggs, spring onions, and white and black sesame seeds. Enjoy 🎥 arte_mon_amour | IGshow more
