CHINESE STEAMED FISH Ingredients: 1 Whole fish About 400grams/0.9lbs,... Scales, gills, and guts removed 1 root Ginger 4-5 Spring onion (scallions) 1 Red chilli pepper, optional 2-3 tbsp Cooking oil ( Neutral flavour oil, peanut, sunflower, canola, etc. ) 3 tbsp Light soy sauce Or regular soy sauce 1 tsp Dark soy sauce 1 tbsp Sugar ¼ tsp White pepper INSTRUCTIONS: 1. Clean fish, rinse well, pat dry. Score 2-3 slits on each side. 2. Place spring onions and ginger on a heatproof plate. Put fish on top and stuff cavity with some ginger and onions. 3. Steam over high heat for 10 minutes (add 2-3 minutes for larger fish). 4. Mix sauce ingredients while fish steams. 5. Remove fish, discard steamed liquid and old ginger/onions. 6. Top with fresh julienned ginger, chillies, and spring onions. 7. Pour smoking hot oil over toppings, then pour sauce over fish.show more
