That's because it takes a little time for the Omochao to neatly place the rings, so you have to use it well before entering the grass. Also, I think you can enter the dirt on all courses regardless of gadgets or the number of rings. I tried it on Sand Road,Mystic Jungle and Apotos etc, and it worked.
