I learned €500 table tennis rackets exist today.

This doesn't prove a thing. There are 100s of different paddles with different wood types and different rubbers (smooth, pipped , anti-spin) with many different profiles that play different based on preference. A cheap paddle with tacky rubber will do the same serve as the first.
