Yeah, the guy explained it well. Similarly, nodes behave in a blockchain. They need to come to a consensus before adding the mined block to the chain.

This system puts consistency above write-availability. I imagine this is deployed in only high stakes situations where consistency is king (finance, etc) cos that profile picture update situation seems like the write request could be accepted & synchronized later. Am I wrong?

You’re right. The system chooses consistency over availability, so it would rather block a write than risk showing different data. That’s why even a profile picture update can fail instead of syncing later.

Na fundamental stuffs we dey learn. You'd have to do Masters for this, a separate course or go to an ivy league school like MIT.
