After a massive attack, this is what our bakery work looks like. Mixing dough, washing dishes, cleaning — all by flashlight. We keep working to provide hot meals for people in need and deliver bread to residents of frontline communities.

Our bakery is now closed. We are producing zero bread for families in Gaza. This is particularly difficult to come to terms with when we remember what people have sacrificed throughout this genocide just for flour. Bread equals survival. When there was nothing else to eat, Palestinians risked, and so many lost, their lives trying to bring home enough flour to feed their families. We were so proud to build something sustainable in the North: a bakery families could count on for free bread. At full operation, we distributed up to 500 bundles every day - 10 loaves each, 5,000 loaves baked, so that 500 families were able to feel some relief knowing they had at least the bare minimum to eat. And we can scale up even further to 10,000 loaves per day. The ovens are there. The bakers are there. The families are waiting. The only thing standing between a closed bakery and thousands of loaves of free bread is funding. It costs just over $1,000 per day to operate our bakery and provide around 500 families with bread. Help us reopen The Sameer Project bakery. Help us provide bread to the families who have already endured far too much just to survive. Donate to our Food and Water Campaign. A severe sandstorm swept across Gaza this weekend, turning the sky yellow and damaging displaced families’ temporary shelters. This is my neighborhood — a small, beautiful community in the north of Tel Aviv. It’s mostly young families with 2–4 kids and elderly residents who’ve remained here. Today, we heard an explosion that shook our home like a massive earthquake. We knew we had been hit. We are safe, and our home was spared — but just a block away, the damage is devastating. A missile struck, causing massive destruction. There’s nothing here for Iran to target — just families and elderly people. And yet, this is what they chose to strike.

Driving through Aurora, Colorado today reminded me of the times I lived in South America on and off for around 6 years. Often the people that walk around selling in or cleaning windows in traffic are aggressive, forceful, and pose as threats to passengers. First of all we have windshield wipers!! Secondly we don't need people looking through our windows to see what they can find coercing people for all the spare cash they have. In Latin America this is normal everywhere. Random people charging you for parking in public space, to sit down to eat at a restaurant they send in their kids to guilt you, or like this at a stop light, to be safe we have to pay them? This behavior isn't a favor or honest work, its a "pay me not to rob you," kind of deal.

We buy like 5 loafs from the local bakery every few months Then cut all loaf in slices, I got this bread cutting machine for it on Amazon Then we freeze those slices We don't eat bread a lot but sometimes, so if you wanna eat bread, you just put a frozen slice in air fryer for about 7 minutes and you have toasted bread One reason is that whenever we go to the bakery here after 12 noon all bread is sold out, so this is easier Now studies show freezing bread and other starches is healthier for you as it doesn't spike your blood sugar as much Related I try to start my day with protein, never carbs or sugar, just egg or meat and then carbs or fruit after I know lots of people start their day with fruits cause I see it at hotel breakfast and I try avoid starting my day with that This trick originally from Andrey Azimov who got it from Michael from Dojobali
