This isn’t traditional Japanese cooking. We never cut an omelet directly in the frying pan, and the combination of soy sauce and sesame oil usually needs some acidity — typically from vinegar or citrus juice.

Dude spent 5 hours destroying the beautfully natural taste of an egg. Just fry eggs in butter, over medium, salt pepper... maybe some rosemary. Eat with preferred toast. I feel sorry for ppl who think they need to get all fancy with eggs. You wouldn't do that to a good steak.
