No they didn't. The shadow comes from the edges of the pyramid and since they are all rectangular, this shadow formes automatically.

They probably figured it out using a couple of sticks. The earths rotation is consistent and since they had a calendar, it probably just seemed logical to build their structures around the sun. They were also likely more intelligent than the people of the modern era, as they actually had to use their brains instead of smartphones.

El Castillo was in ruins & overgrown when rediscovered. In the 1920s–30s, archaeologists (Carnegie Institution + Mexican gov’t) cleared debris and restored damaged staircases + two faces using new limestone blocks where originals were looted/missing. The pyramid’s core geometry, cardinal alignment, and equinox serpent shadow effect were intentionally engineered by the ancient Maya ~900–1200 AD, the restoration simply preserved that original design.
