honest question, why so much fat cap? I trim my own steaks and I tend to remove most of the fat cap to keep it more lean when I slice and serve?

All the cows are different. The fatter the cows, the fatter the fat cap. I’ve had some that barely had any and some people didn’t like that so it really depends on the cow. Also every Butcher has his way of cutting it. This fat is real grass fed and finished healthy fat.

How do you ship that beef economically and keep it frozen?

Well we started not shipping over the summer. That’s #1 For instance next year no shipping June July and august. Dry ice if available if not lots of ice packs and insulated boxes It’s hard to make it perfect If we ship overnight due to cost we will not be in business as many other small farms
