We've always hatched chicks by giving eggs to a broody. Never incubated. They mostly run on instinct, but I think there's a lot of learned behavior even for a chicken. Benefits to being raised by a mom. I think we get craftier chickens. Avoid hawks, raccoons better. More feral.
