Check to see if the cheese contains "animal rennet." If so, the cheese is safe to consume. Tillamook cheese contains animal rennet and is safe to eat.

Have made my own ricotta for years, just had husband make me a cheese press, plan on making aged cheeses, searching for a used wine fridge now to use as a cheese cave.

EU cheese is also mostly made with Pfizer's GMO cultures. Even organic cheeses use "vegetarian" substitutes for rennet. Cheese still made with real rennet is becoming a rarity. Your best bet are hard cheeses like parmigiano, and cheese from certain niche organic producers.
