Full recipe: 2 gallons homeade stock chicken or beef or both chilled. One onion One carrot One small bunch parsley 10 Egg whites Two pounds of ground grass fed beef Salt and pepper One tbsp of white miso Puree everything in a food processor until well combined and very emulsified until the texture is a very runny wet mixture. Set aside Place cold stock in a tall stock pot and set on top of the stove on high. Immediately while still cold whisk in the wet Meat egg white mixture with a large whisk. Turn heat on and continue whisking every two minutes or so while the stock is starting to get hot. It will look like a wet hot mess, don't worry it's exactly what it should look like. As it begins to get to the simmer stop whisking at this point. If you have a thermometer that would be around 125 degrees. Now it's time to let the albumen and protein coagulate and in turn clarify the stock. Make sure it is only on the lowest and gentlest simmer. As it gets to the simmer the wet mess will turn into a dense crust and like magic the broth will begin to pile tru the top. When this happens gently poke a two or three inch hole in the top of the raft and you'll allow the broth to freely simmer . Keep it low and slow for about an hour. Be patient. When finished. Do not move the pot. Let it sit for ten minutes or so and settle. Then wet a rag and place over a strainer and bowl. Gently ladle into the strainer like in the video. Serve be dry warm. Not hot. Bon appetit. Chill and freeze the rest! It's the best health food around!

Tonight I’m flying my A350 to Hong Kong, and honestly, it still feels like one of those routes that never loses its magic. There’s something about heading east into the night, knowing you’re about to drop into a city that’s part skyline, part harbour, part mountain, and completely unforgettable. You can have the fanciest dinner in town, but sometimes the best Hong Kong memory is still a simple bowl of noodles after landing. 3.The energy. It’s fast, elegant, and full of life… the kind of place that gets under your skin and stays there. But the slow pace of a Star Ferry ride is unbeatable. The Trap in Every Mathematics Lecture If you’ve taken enough math courses, you start noticing the same little move. The lecturer warms up with the obvious stuff, add matrices entrywise, scale by α, do the row-column product, and you’re thinking alright, where is this going. Then you relax. You stop resisting. And right there, they drop one line that quietly rewires the whole subject. When Benedict Gross says matrices represent linear operators, he’s telling you to stop treating a matrix as a rectangle of numbers and start treating it as an action. A linear operator is a function T: ℝⁿ → ℝⁿ that respects two rules: T(u+v) = T(u) + T(v) T(αu) = αT(u) Once you pick a basis, T is completely determined by where it sends the basis vectors e₁,…,eₙ. Put T(e₁),…,T(eₙ) into columns and you get a matrix A. That is what A represents T means. A is the coordinate portrait of the transformation. Now the punchline that makes matrix multiplication feel inevitable. If B represents S and A represents T, then doing S first and then T is the composition T∘S. In coordinates that becomes A(Bx) = (AB)x. So multiplying matrices is really composing transformations. That’s why multiplication is usually not commutative. T∘S is generally not the same transformation as S∘T, and the matrices inherit that noncommutativity. This scene grows more and more important as we move forward in s2. For one thing, it highlights the difference between the challenge Cihan is facing now and how it differs from the past. Before, he always had to choose between duty and love. The fact that this phrase (I won't lose him/her, no matter what) is repeated over and over tells us as the audience that these characters mean business when it comes to each other.
