what to learn & why swiftui or uikit?

Depends on your current goal. If you want to get into iOS Development and look for a job 2-3 years down the line, then SwiftUI is the way to go. It has evolved a lot and will continue growing, and all companies should shift to SwiftUI. If you've to look for a job within a year or so, then UIKit is the way to go.
