15 minutes boiling an egg and leaving another 15 minutes is going to be way over done .. bringing a pot of eggs to boil.. turn off with lid for 17 minutes are the most perfect hard boil.

I boil mine to desired hardness. Put in fridge. Make my color water also using cabbage to make this amazing blue. And then once ready and cooled, I add the eggs into it and put in fridge over night. This way you don’t over cook the egg.
