I'm convinced the best way you can possibly eat a tomato is Rotolini style. Rotolini means tiny rolls in Italian. Mine are filled with Boursin cream cheese, heirloom tomatoes, wrapped with prosciutto and garnished with a little Parmigiano-Reggiano. They taste phenomenal! If you don't like tomatoes, here are some other options: Ricotta + parm Mozzarella or provolone and fresh basil Melon, fig and goat cheese Asparagus spear and cream cheese The sky is the limit!

If there’s anything definitively “what you make of it,” dinner is that on the regular. Enter: cutlet maxxing. Start with a chicken breast. Pound it thin—not just to tenderize, but to create maximum surface area for flavor. Lay a thin slice of prosciutto right on top before the pass of the mallet (or tortilla press) so the salt and fat get hammered into the meat. The prosciutto essentially becomes part of the cutlet. Now the holy trinity: -Seasoned flour (salt, pepper, garlic powder, maybe a whisper of smoked paprika). -Egg wash spiked with grated Parm, black pepper, and a splash of milk. -Panko breadcrumbs mixed with more grated cheese and Italian herbs. Press the breading in hard so it sticks like armor. Fry in a generous layer of olive oil + butter until deep golden and crispy. Drain on a rack. Top with marinara, fresh mozzarella, and more Parm, then broil until bubbly and blistered. Serve with spaghetti or just a massive salad so you can pretend you’re balanced. 🥒TZATZIKI INSPIRED PERSIAN CUCUMBER SALAD If you want an easy, light, refreshing salad, an easy side to some protein, or a fun snack, this Persian cucumber salad has the best textures and flavors in each bite and its such a healthy way to stay satiated. You can use any kind of cucumber but I like Persian or Japanese cucumbers best for this. Here is how I made it: 1.Thinly slice 6 Persian or mini cucumbers. Add them to a large mason jar or bowl. 2.Finely dice half a small red onion or a shallot would work here too. You want this to be super finely diced. That’s key! 3.Super finely chop a handful of fresh dill (you should yield about 2-3 tablespoons). 4.Squeeze juice out of one large lemon and add 1 freshly minced garlic clove. 5. Top it all off with 2 tablespoons of a good thick plain greek yogurt, 2 tablespoons of a really GOOD olive oil, a couple pinches salt, pepper, and 1 to 2 tbsp of everything bagel seasoning. Give it a good shakey shake (or toss!) and enjoy. You can easily add some chicken, shrimp, or salmon and this would be an incredible dish that’s so easy and so good! . Makes two servings at 350 calories, 20g protein, and you can add chicken or steak to make the protein more substantial. But honestly, it was just as good without any of those - it gave me some serious Mediterranean food vibes with all these summer flavors. If you want a low-carb sandwich that hits the spot, this one’s for you. The cheese is actually baked into the eggplant, making a great flatbread like vessel that you can use to make your favorite lowcarb, keto-friendly sandwich. Top it up with whatever you want. Full recipe below, and you can always comment “BREAD” and I’ll send you my free mini lowcarb breadwhich ebook. Here’s how to make it (makes 2 servings): 1.Preheat your oven to 400F. Grab 1 large eggplant and thinly slice it using a knife, mandoline or vegetable peeler. 2.Season them with salt, lay the slices on a paper towel and pat them dry after 5 mins. 3.Grab an oven-safe tray, line it with parchment paper, and sprinkle a thin layer (1 serving) of shredded cheese (ideally mozzarella) directly on the paper. The fake stuff is often bland and neutral. I’ve always trusted Italian and Greek olive oil, but stories like this make me double-check labels and taste more carefully now. We pay premium prices for what we believe are serious health benefits. Getting mostly seed oil defeats the whole point. Do you check the origin and actual taste of your olive oil, or just go by the bottle?
