She is very wrong about Sicily re the dropping of the last vowel. Neapolitan has that, but not Sicilian. Sicilian is euphonic, it requires a final vowel, generally one of -a, -i or -u. So: couscous > cuscusu New York > Nova Yorka Brooklyn > Brucculinu Neapolitan on the other hand drops the last vowel like there is no tomorrow, or turn everything into a schwa.

The fact that many in the South no longer pronounce these words the way they used to is due to a linguistic genocide enforced by the Roman authorities. If anything, the authentic form of these dialects spoken by Italian Americans should be making a comeback in Italy itself.
