I made these lower calorie and carb so they dont have a crust, but you can always add a crust at the bottom, too with some crushed up lowcarb crackers or cereal. Here is how I made it: 1.Process 1 tub of cottage cheese (16oz), 1/2 cup of thick greek yogurt (I used Face 0%), 2 eggs, 4 tbsp powdered monk fruit, 1 tsp vanilla extract, and 1 scoop vanilla protein powder of your choice. 2. Layout a piece of parchment paper over an ovenware try. Pour the cheesecake mixture in the pan. 3. Toss a large handful of fresh blueberries over the batter. 4.Pop this into the oven for about 50 mins at 350F. 5.Remove from the oven, and or the most important part: let this cool COMPLETELY, and once cooled, pop it into the fridge for at least 5-7 hours, but ideally overnight. They’re a great healthy fry alternative and so good! Very important: a high heat oven is super critical for this recipe, we’re gonna be baking these at 450F. If you dont do this, or skip the parmesan, they will be delicious, but just not crispy! Here is how I made them: 1.Start by peeling 6-8 medium carrots. Cut them down the middle, then again, then again so they are into fry shapes. You want it to be about 1/4 to 1/3 inch thick max so it cooks evenly and gets crispy. SUMMER SALAD IDEA: Mediterranean Chicken, Pistachio, & Herb Salad If you love mediterranean recipes and mediterranean food, and you want an amazing summer salad that hits all the right notes, then try making this easy salad at home. Its got one of the best flavor combinations, its so easy to make, and SO good. I love pulsing cauliflower into snowflakes here, it adds such a nice texture, and it’s almost like having couscous in the salad. Here is how I made it: 1.Lets prep the chicken first and let it marinade. Add 1lb of chicken thighs to a bowl. Drizzle with 1 tsp olive oil. Season with salt, pepper. Add the zest and juice of a small lemon, 2 tbsp tomato paste, 1 tbsp oregano, 1/2 tbsp garlic powder, and 1/2 tbsp harissa spice or paprika. Mix really well. Ideally let this marinate for 1-2 hours, or you can also just pop it into the oven at 400F for 30 mins, or your airfryer at 400F for 20 minutes. 2.Prep your salad base. I finely chopped 5oz arugula and added to a salad bowl. I also pulsed the florets from half a head of cauliflower in a high powered blender or food processor until they have a super fine consistency. Is this really the 4th best spread or dip in the world? Guacamole was recently ranked as the 4th best sauce in the world, in my book, it’s a very close battle with hummus for that number one spot. Let me know which you would pick! I like to make my guac a mix of creamy but chunky, and also left out tomatos, which are typically in guac, so feel free to include them, and also make any substitutions you like to make your own version. This is usually the way I do it for an easy appetizer that i know people will like, especially in the summer. Another preference is temperature! I like my guacamole on the colder side, so make it with avocados straight out of the fridge and serve right away for best results. Ingredients: ✅3 large avocados ✅1 large handful fresh cilantro (about 1/3 cup finely chopped) ✅1/2 large red onion, finely diced (finely diced is key!) ✅1 jalapeno, finely diced (remove seeds if you dont want it spicy) ✅ 2 garlic cloves, minced (use fresh but jarred works, too) ✅1 lime ✅1/2 tsp cumin ✅2-3generous pinches salt Here is how I made it: 1.I prefer cold avocados so store them in the fridge for at least 2 hours prior to starting. 2.Grab a board or a bowl - i did this right on the board. Finely chop 1 large handful fresh cilantro which yields about 1/3 cup. the cilantro, add 1/2 finely diced large red onion 1 finely diced jalapeño (remove the seeds if you dont like it spicy!), and 2 freshly minced garlic cloves. 4.Grab your 3 large avocados, remove the skin and pit and add to the rest. 5.Squeeze the juice of 1 small lime. Y’all asked for it so here it is, my Carnivore Crustless Quiche! 🥓 This makes an 8x8 casserole and it is STUPID easy. Ingredients: ∙8 eggs ∙1 cup cooked meat (I used bacon and it was everything) ∙2 cups shredded cheese of your choice (I did cheddar + gruyère) ∙3 tbsp heavy cream ∙Butter for the dish (and I mean HEAVILY) Directions: Brown your meat and let it cool. While that’s going, whisk your eggs, shred your cheese, and mix it all together with the heavy cream. Save a little cheese and bacon to sprinkle on top. Heavily butter your dish, pour everything in, top it with your reserved cheese and bacon, and bake at 350° for about 25 minutes until the knife comes out clean and there’s no jiggle in the middle. Let it rest 5 minutes before you cut it. Top with whatever you want, I went sour cream and I have zero regrets. The whole casserole costs about $8 to make and feeds 4 people. That’s $2 a serving. Boursin Baked Crab Dip I cup lump crab 2 tbs Boursin cheese 1 tbs sour cream 2 tbs butter 1 tbs parm cheese 1/2 cup pork panko (not fine) A sprinkle of Old Bay Combine seasoning, Boursin cheese and sour cream and place in one or two ramekins. If a one ramekin air fry this part for 5 minutes at 375 and then add the topping (melted butter, crumbs and parm cheese) and air fry to 8-10 minutes. You can skip the 5-minute air frying stage if you use 2 ramekins. Just add the topping and air fry for about 10 minutes. I've done both and both turn out great.
