In 2014, Shane Harris learned about one of the most legendary cocktail-party appetizers in Washington, D.C.: Evangaline Bruce’s candied bacon. But Bruce ferociously guarded the recipe—and no one, not even former Vice President Dick Cheney, had come close to replicating it. Join Harris, a staff writer for The Atlantic, as he cooks a batch of this fabled bacon—and shares the story of how he tracked down a recipe from a bygone era of Georgetown families who wielded outsize influence over American foreign policy. “Behind the Byline” is a series from The Atlantic that lets you get to know the people behind our journalism. When McKay Coppins set out to report on the explosive growth of the sports-betting industry, his editors thought he should experience the phenomenon firsthand—so he spent an NFL season as an online gambler. His reporting took him to Las Vegas, where he wanted to see how betting online compared with gambling the old-fashioned way. Coppins needed a guide to show him around the casino. Atlantic staff writer Tom Nichols stepped in. Read more about their time in Vegas, and find Coppins’s April cover story, at the link. 📸: Michael Reaves / Getty Images; Harry How / Getty Images; Thearon W. Which restaurant serves the best free bread in America? Caity Weaver embarked on a quest to find out. Weaver surveyed more than 500 people; traveled more than 13,000 miles; drank more Diet Coke than she thought possible; scoured the country—from a three-Michelin-starred fine-dining destination in Las Vegas to a lodge in the backwoods of Tennessee—all to find the best free bread. In The Atlantic’s May cover story, read about Weaver’s quest—and find her pick for the best loaf in America. 🎨: Produced by Grace Buono.
