Start with the wood... Oak is my favorite. Hickory or Apple are next. Gotta hit 700 degrees. Yes, really. Don't use a rolling pin on the crust dough Dust the mold with flour or cornmeal Rotate the pizza several times during cooking Should only take 2 to 3 minutes to cook.

The key is not to add too many ingredients. Add them at the end. Otherwise the dough will get too weighted down.

Tip: Sprinkle some cornmeal on your pizza peel BEFORE putting the dough on. This will make the pizza easier to slide off into oven.

Cornmeal instead of flour?

First, gotta get the oven hotter than your regular kitchen oven. I shoot for about 650. Then push the fire back to the perimeter of the oven and I wipe up the spot with a wet rag on the end of a short handle. Throw a little corn meal on the brick and put cornmeal on the pizza peel so it slides right off. Spin the pizza with the peel periodically. "Less is more" when it comes to a thin layer of pizza sauce. I like to brush a little olive oil on the edge of the crust before cooking also. You'll do great. My wife and I were at your house a couple of times for fund raiser and after the CMA once and also joined you at your club on Broadway in Nashville. Keep speaking truth my friend.
