When the pilot flies the plane in a loop—a full 360-degree vertical circle—both he and the water are undergoing centripetal acceleration toward the center of that circle. Even when the plane is upside down at the top of the loop, this centripetal force combines with gravity to make "down" still feel like it's towards the floor of the plane. So, the pilot and the water feel a force pressing them into their seats and the bottom of the plane, even though they're upside down. This is why he can pour water into a cup as if gravity is acting normally. It's not defying gravity; it's just physics working during circular motion!

Fill a bucket with water, swing it in a vertical circular motion and you'll find that the water doesn't spill on your head because of centrifugal force.
