Cartographer here. The Mercator projection is best for nautical navigation, and we’ve stuck with it since. (Rhumb lines are straight lines). Think of peeling an orange then trying to lay it out flat

Yeah, that doesn't make any sense. A globe is not a flat projection. There's no reason it shouldn't be able to be depicted 1:1.
