So how am I twisting this scripture: Pro 23:31 Look not thou upon the wine when it is red, when it giveth his colour in the cup, when it moveth itself aright. Pro 23:32 At the last it biteth like a serpent, and stingeth like an adder. Pro 23:33 Thine eyes shall behold strange women, and thine heart shall utter perverse things. Are you claiming that this speaks about something other than fermentation?

You're so wrong that it's hilarious. Red wine comes from red grapes. White wine comes from white grapes. No time in history did they "peel grapes" to remove yeast to make non alcoholic wine. There are boiling and additive methods that would have been used.

Oinos refers specifically to fermented wine. Certainly diluted, but not 20:1. 5:1 would have been the extreme end of dilution. They didn’t slander him as a drunkard for drinking grapejuice, or water with a splash of wine. I don’t even drink, but I dont think these are good arguments.

The reference to wine being diluted 20 to 1 in Homer's Odyssey appears in Book IX, lines 208–210. Where is your source for 5:1 being "the extreme end of dilution"? You're not going to believe this, but accusations made against Christ involved outright lies.

The Bible references “strong drink”. If not liquor-level, what is it?

Well, it wasn't hard liquor since that hadn't been invented yet. "Strong drink" could just be wine with high alcohol content, but not as high as what we call today "hard liquor." In some contexts, it could also reference something that is strong in the sense of being pungent.
