Preferably medium rare, but as he said, the medium is okay. Anything cooked more than that is blasphemy! 💯

I'm not into this, "the rarer, the more manlier" bullshit. Medium is the superior cooked state of steak, but it's a tighter window to get it.

My two 12yo boys love a medium rare steak. Every time they finish one off it reinforces in my mind that I am, without a doubt, the #1 dad.

Blue rare ftw. I sous vide to 112°F then toss on a 700°F grill, just long enough to get a good sear. Comes out perfect every time.
