When he came to the U.S. in 2015, Bughra Arkin didn't initially plan to open a restaurant. But he stayed in Los Angeles because back in China, his culture is being persecuted. Millions of Uyghurs have been detained in China, including Arkin's dad, in a vast network of camps – a system that the U.S. government has labeled a genocide. With the atrocities affecting his family back home, Arkin opened his restaurant Dolan's in 2019 to spread awareness and serve traditional dishes of the Uyghur people. "If they learn something about my people while eating this food, then I've done something right," he said.
