that's interesting, but what do you think of this?

In 2023 there were 113,000 acres of tobacco grown in NC, there were 316,000 acres of tomatoes grown in the entire US. From basic supply and demand economics, what would happen to the price of tomatoes if all tobacco farmers grew tomatoes instead? Short answer = It would collapse

But "sauce" tomatoes are not bred for flavour, they're bred for high sugar content. That's what gives them their "yield".

So if i wanted to make sauce from scratch, what tomatoes would i ideally look for?
