Whole point of this fight was - Itachi wanted Orochimaru to emerge from Sasuke's body so that he could rip him of off Sasuke. If Itachi wanted to kill Sasuke,he would've done that already.

Yes, he could extinguish the Amaterasu at will. And he did stop it. The goal was to exhaust Sasuke to the brink. And then bring Orochimaru out, to seal him away and get rid of the Curse mark.

I think he just targeted the actual fire instead of sasuke since he couldn't physically see sasuke through the flames

Yes the base form of amaterasu allows you to summon and desummon the flames, it's not a unique function to sasuke; what you're thinking of is flame control, him being able to shape the flames into constructs like spikes or swords

I think he did, his eye gradualy reverted instead of doing so instantly. It also didnt go blind or continue bleeding further, meaning he stopped it instead of being stopped by eye damage.
