I am really curious about spine pro, is there any tutorials or guides that are better or more concise than others when getting started with the program?

I always recommend official page: they've done a lot of work making tutorials and streamings about spine.

Depends on for what you'll doing your animation. If it's about the video renders only, then it's totally okay to use AE. If you're about making vtubers then try live2d. In my case I have gamedev background, so I use Spine.
