I always remove the membrane because it can get leathery or rubbery depending on how you cook it. This is the method that a great many top pitmaster use. I so something similar, but I often grab the membrane with a paper towel After I loosen it with a knife because the membrane is slippery and the paper towel gives me a better grip.
