I hate sweet potatoes more now than I did before!

Boil the potatoes first, THEN peel them.

Sigh.... Wash em Bake em 400 for 30 mins After they cool off, the skins slide off easily. The real question is... Sweet Southern or Savory?

Throw them in the oven unpeeled, let them get nice and caramelised, then peel the skin easy peasy. Purée with condensed sweet milk, an egg, vanilla, top with a pecan streusel. You’ll thank me.

Not that it helps right now, but they do sell pre-peeled and cut sweet potatoes in the freezer section. Just thaw for 15 minutes and then proceed with recipe. But, like others have said, I agree that it's your peeler being dull and having a small grip. If you ever brave the potato again I would definitely upgrade that device as it looks like all it wants to peel are half your nuckels. Side note, you do not have to remove every spec- roll with it being close"ish " It's Thanksgiving and your effort alone is amazing! 😁 Happy Thanksgiving to you and your family!
