Why do they sound so good!? What did you do?

Both types of doors use the same script. Essentially I have a sound for when a door is moving which just loops and increases/decreases in volume based on the velocity of the door. I also play a sound when the door's constraint reaches one of its limits.

I feel like the best UX would be detecting a “click” and having the door automatically open/close fully, but if they “drag”, give full freedom

Only pressing a button would definitely be the best UX. However, I do think dragging to open a door for an interactive singleplayer game can be more immersive, especially for VR. As long as you don't have a gazillion doors to open, it's not too bad.

Always wanted to make something like this, but the only thing stopping me were the sounds. Where did you find them, if you don't mind me asking? Or did you make them yourself?

@roblox_sozzly All sounds were uploaded by Roblox except for the sound for the sliding door moving. That sound is a CC0 sound that I modified to loop and to be more balanced.
