This is what I absolutely appreciate about 2 & 3, in Meltdown Manny was lonely thinking he was the last Mammoth until he found love with Ellie and in Dawn Manny and Ellie finally having a kid of their own with Peaches. Thus Manny finally having the family he once lost.

If you think Manny was the dad, it makes his arc of the movie so much better. The way he becomes so gentle with the baby, he's finally realized this is his second chance and he's not allowed to fail, is beautiful. It also explains why he rushes Ellie for kids in the next film.
