It might be surprising to some people but you can find absolute masterpieces of ancient Islamic architecture in China. We're currently visiting the 17th century Afaq Khoja Mausoleum in Kashgar, the family tomb of the Afaq Khoja dynasty of Sufi leaders. This place is extremely famous in China not only for the architecture, but because of Iparhan, a Uyghur woman from this family, who became a legendary concubine of Qianlong, the 18th century Qing emperor. Her name in Chinese is "Xiang Fei" (see her statue in the last picture), which literally means "fragrant concubine" because, legend has it, her body naturally exuded a fragrance so much so that it attracted butterflies. In any case, this place, her family's mausoleum is typically considered the most representative masterpiece of Islamic architecture in Xinjiang - and looking at it, I understand why!
