I think the key is they aren’t debating. It’s two smart men who respect one another’s beliefs having a conversation.

Yes, great discussion, but you're wrong about every science book being the same a thousand years later. There have been numerous "facts" that have been disproven or our understanding has expanded causing us to realize that the science was wrong. Dr. Fauci is case and point. FYI, It was roughly 500 years ago that "Science" accepted the fact that the Earth was round. Science books before that argued vociferously that the Earth was flat. Science isn't a set of facts, its the evolution of human understanding of the world around us. Evolution being the operative word. Good debate though.
