It depends on the dish.. this is great technique for when you want to chop it fine. You absolutely will burn fine garlic if you put it in a pan without sauce... fine chopped garlic is for adding to sauce so it melts into it. If you put garlic in a hot pan with oil... you want to use larger cuts or whole garlic so it doesn't cook too fast. A lot of times, if you want garlic to be sweeter and smoother... you want to bake it with olive oil.. usually in foil.
