The movie severely downplays the atrocities of the beast folk. In the light novel the beastfolk spent days before the siege sitting at the edges of the fort, killing and eating people alive in the night to mentally damage the defenders before attacking.

It's the correct response. If they don't, two things happen. 1: Human shields are confirmed to be effective and becomes standard. 2: The strategy is successful, and they die. Then the human shields get raped and eaten anyway.

You will never see characters dealing with actual moral quandaries like this in Western media. Only anime and especially manga tries to push the envelope with their stories like this.
