Cowboy caviar doesn’t have cheese and cream. It’s usually some variant of black beans, corn, peppers, onion and other veggies with basic seasoning and oil and vinegar. I like adding sweetener to it when I get it from the store. That crack dip looks good though.

I have also seen the version you mention with the beans called cowboy caviar. I think maybe it’s one of those things that has a bunch of different variations. 🤷

Too "soupy". Needs more corn and more chilies. (Btw thawed frozen corn has better texture than canned corn)

Couple other people have mentioned this as well, and I have seen the bean version of it. I wonder if it could be a regional thing? 🤷
