But let me save Washington, D.C. some trouble right now: Do not “solve” the price of beef by trying to steer Americans toward lab-grown cultured meat. Break up monopolies if they are abusing the market. Protect independent ranchers. Encourage local processing. Let farmers compete. But leave my steak alone.
