Japan ramen shops keep a solid steel egg in boiling water and drop it straight into your bowl if the broth cools to get instant heat.

These steel "eggs" (or hot, egg-shaped stones known as *yaki-ishi*) are not in boiling water; they are heated until red-hot in ovens or directly over a fire. 😎

I've literally never seen this in any Japanese ramen shop I've ever been to. In Fact most ramen shops are set up to where you get in and get out quickly. You're not in the shop long enough for your soup to get cold.

No boiling water in the world would make it that hot clearly that was heated with flame

This practice is not standard practice in Japanese ramen shops... at least I've never seen it in any ramen shop I've ever been to......

The egg is not for eating to take it secretly home :-( If you can't get a doggy bag :-)

器を見ると 大阪の「つけ麺 紋次郎」 のようですが このようなサービスは日本のラーメン店で一般的とは言えません。
