Where do I proceed to learn the pros/cons of each so I can make my best descision for the node that I will begin running.

Knots uses Core source code and adds ability to configure your node anyway you like. This means that you set up your own policy on your own node. Knots comes with defaults, if you don't want to do that. Core is steadily moving away from giving node runners control. Both are Bitcoin clients, both will do the transaction validation for you. From a sentiment point of view, if you believe in Bitcoin being used for strictly monetary purposes you are team knots. If you believe that Bitcoin should be used as database for arbitrary data and art,and to enable various alternative coins and projects, you are team Core.

Lol, nicely made! Running Bitcoin Core though, don't want to run the version maintained by one hillbilly.

Look at github. It is the stable version of Core code with Luke's UI. As such it is safer to run than Core's latest. v30 will be full of bugs. It's a given.
