. Different altitudes, different layers of the atmosphere with different dew points. Persistent contrails are 100% meteorological. For reference see photos of the WWII daylight bombing campaigns. Throw the red herring back into the water.

This happens ALL THE TIME in my area. I get upset but can’t get anyone to do anything about it.
