So that is the traditional American way of making cider. But it originated in the UK with the celts, it wasn't until the 5th century that apples became a cultivated crop. Cider was predominantly drunk in the south West of England, around the Somerset and Devon areas.

When I first moved to the mountains in the 1980s, we would go out to an orchard that pressed its own cider. We would buy it in gallon jugs. If you drained some off the top, you could freeze them for use all winter. If you didn't and let them sit, they would ferment into hard cider. My son told me he has memories of cider jug "explosions." lol I guess I learned the hard way.

Funny thing is my grandparents made this & moonshine in Romania (tuica). Everyone loved the "old fashioned drinks" but then wanted to be "modern" & drink in the city at the bars & clubs. This countryside style of drink was considered simple or even low class. Now everyone wants to learn the traditional ways of making toxic free drinks.

@Yelmakh1 Delicious, even the washing of the apples in the stream is beautiful, the only criticism I have for the girl... Since she is standing barefoot among the apples, she could have stood downstream instead of upstream.

7 Informative and Scientific Reasons Why Making Fresh Apple Cider the Traditional Way Is Amazing Traditional apple cider making involves mechanically pressing fresh, whole apples without heat pasteurization, filtration, or additives, resulting in a nutrient-dense, unprocessed beverage. Here are seven science-backed reasons why this method stands out: 1. **Preserves Higher Antioxidant Levels**: Freshly pressed, unpasteurized cider retains significantly more polyphenols—potent antioxidants found in apple skins and pulp—compared to pasteurized versions. Studies show pasteurization can reduce total phenolic content by up to 20%, limiting the cider's ability to combat oxidative stress and inflammation linked to chronic diseases like heart disease and cancer. 2. **Maintains Heat-Sensitive Vitamins**: The cold-pressing process avoids high temperatures that degrade vitamin C (ascorbic acid), a key nutrient for immune function and collagen synthesis. Research on similar fruit ciders indicates that pasteurization at 63°C can still preserve much of the vitamin C, but traditional methods ensure maximal retention, providing up to 10-15% of daily needs per serving. 3. **Includes Natural Fiber for Gut Health**: Unlike clear commercial juices, traditional cider is unfiltered, retaining pectin-rich pulp from the whole apple. This soluble fiber supports beneficial gut bacteria, improves digestion, and may lower cholesterol by binding bile acids, as evidenced by studies on apple-derived fibers showing reduced LDL levels. 4. **Harnesses Beneficial Enzymes and Probiotics**: Unpasteurized cider contains live enzymes like amylase and natural yeasts or bacteria from the apple's skin, promoting mild probiotic effects for microbiome diversity. This can enhance nutrient absorption and immune response, similar to findings in raw fruit ferments where such microbes reduce gut inflammation. 5. **Offers Superior Bioavailability of Nutrients**: Minimal processing in traditional pressing keeps nutrients in their natural matrix, improving absorption rates. For instance, the synergy between apple's quercetin (an antioxidant) and fiber enhances its anti-diabetic effects by stabilizing blood sugar, outperforming isolated extracts in commercial products. 6. **Supports Heart Health Through Polyphenol Synergy**: The diverse phenolic compounds in fresh cider—such as chlorogenic acid—work together to improve endothelial function and reduce blood pressure. Clinical data links higher intake from whole-fruit presses to a 10-15% drop in cardiovascular risk markers, an effect diminished by heat processing. 7. **Promotes Seasonal, Localized Sustainability**: Traditional methods use peak-ripe, local apples, maximizing nutrient density (e.g., higher beta-carotene in fall-harvested fruit) while reducing transport emissions. Lifecycle analyses show such practices cut food miles by 90%, indirectly benefiting planetary health and human exposure to fresher, pesticide-minimized produce.
