So that is the traditional American way of making cider. But it originated in the UK with the celts, it wasn't until the 5th century that apples became a cultivated crop. Cider was predominantly drunk in the south West of England, around the Somerset and Devon areas.

When I first moved to the mountains in the 1980s, we would go out to an orchard that pressed its own cider. We would buy it in gallon jugs. If you drained some off the top, you could freeze them for use all winter. If you didn't and let them sit, they would ferment into hard cider. My son told me he has memories of cider jug "explosions." lol I guess I learned the hard way.

Funny thing is my grandparents made this & moonshine in Romania (tuica). Everyone loved the "old fashioned drinks" but then wanted to be "modern" & drink in the city at the bars & clubs. This countryside style of drink was considered simple or even low class. Now everyone wants to learn the traditional ways of making toxic free drinks.

We do this every year, same way. This harvest we got 300 l, some we make alcohol cider for Winter, the Rest we boil and botle for the Rest of the Year, van hold up to 2 years. :)
